“What is the capacity of the water reservoir in this machine? Do I need to watch how much water I put in every time or is it big enough that I can put an entire gallon of water into the tank and resume making ice.”

You have to watch the amount of water or hook it up to a water line. The ice does not stay frozen long and gets recycled back in to water reservoir. Returned mine after 1 use. Leaked water and shoots ice out onto floor randomly due to doors not shutting. Makes very little ice.
