“When I consult my VO2 max measurements in the Performance widget, I get a number and under it a date. The date never changes. What does this date refer to? Is it normal that it never changes? Thanks”

The date doesn't change unless you're getting an updated VO2 max. Your VO2 Max will have to change in order for you to get a different date.
