Hello - this is Nancy at GE Appliances and I am happy to help you. The knobs are made of a weighted stainless steel appearance material. It is temperature resistant material so the knobs will not too get hot when using the cooktop or oven. We do not recommend replacing the knobs. Since our appliances have been designed to meet specific requirements, we do not support altering or changing any aspect of the design. I hope this helps!
