Hello. The model JB735SPSS does the convection cooking with the use of a fan in the rear to circulate the hot air around the food for browning more evenly. It does not have a third element around the fan. No Preheat Air Fry is a special cooking mode that is designed to produce foods with a crispier exterior than traditional oven cooking. The Air Fry mode optimizes heating from the Bake, Broil, and Convection Fan elements to achieve the crispy fried food results you want without the need of hot oil. The model JB655 does not have the electronics to do air fry. Hope this helps. Geoff@GEA
