The convection bake setting turns on a fan (besides the heating element) which circulates the air inside the oven to allow for more even heating. The "Bake" setting only utilizes the heating element. I use the convection bake setting the majority of the time, for cookies, cakes, pizza, casseroles, and roasting meats. The convection bake setting is especially important when putting several food items in the oven at the same time and utilizing more than one rack.
