Hello- Thanks for contacting us. Thats a great question! Convection bake mode is intended for single rack baking when additional airflow is desired to enhance evenness. The traditional bake mode is intended for single rack cooking. This mode uses heat primarily from the lower element but also from the upper element to cook food.
