Shouldn’t be a problem, I have a Netgear Nighthawk X6 that has 1-2.4 GHz channel and 2-5GHz channels all setup with the same SSID and had no trouble with getting the thermostat to connect. I don’t have any experience with the Orbi model but if you do have trouble connecting you should be able to temporarily disable the 5GHz channel in the router configuration until after your thermostat has successfully connected.
