“Question - is it best to leave 256 m.2 drive for OS and add a 2nd 2.5 SSD Drive for file/photo storage? or if I replace 256 m.2 what would I have to do to load windows 10 on new m.2 drive? (I'm not a big techie but have added ram to other laptops)..”

You may wish to have an authorized service provider do this for you. They can replace the drive with a larger capacity and transfer Windwos and all the files for you. Geek squad can do this.
