“On HP's website an "anti-reflective" display is mentioned. I'm having a great deal of trouble finding out any definitive information on exactly what this is. Does this mean a matte screen and on what models is this available? Calling HP wasn't helpful.”

I cannot tell you directly but I'm typing on it. It's very great at handling reflections in doors if that's what your asking. If your in a car with bright sunlight, it's harder to see and you'll notice all the finger prints. But for most uses, no... i don't have issues with the screen.
