“Page 5 of the manual talks about placing coasters or place mats under the unit to prevent "plasticizers" from migrating and darkening the countertop or table. What the heck does this mean and will it impact granite countertops?”

plasticizers are added to plastics to make them more flexible, less likely to crack. Your granite countertop does not have them and should be just fine with this unit sitting on it. Just make sure the little feet are on it so there is at least a small gap between the bottom of the fryer and the top of your counter.
