Audio does travel through these channels as well to the device you plug them into, such as a TV. Only if you are extending your setup to an entertainment system you might plug in the Video cable to a different device than your audio system. Depending on your DVD player (supporting optical out) and what your audio system supports (optical in) this would fit. You may have other options which are also supported such as coaxial digital audio out as well. which is a lower cost option.

I would say no because HDMI is always the best connection going from a Blu-Ray player to your audio-video receiver. I use the fiber cable ONLY to get 5.1 Dolby Digital from the over-the-air signal to my audio-video receiver. Hope this helps!
