“I received this cooker as a gift for my birthday and it’s too late to return (my sister held it until my birthday). I’ve tried multiple times to cook eggs, broccoli, cauliflower, etc. The food is not getting done even with extended pressure time. Advice?”

It's really a trial & error kind of learning, my suggestion is to watch YouTube videos & practice. Be aware once you get comfortable with it you will use it so often!!! Happy cooking!
Sorry, there was a problem. Please try again later.Make sure you are adding enough (recommended) liquid. Make sure your vent is closed all the way. The diameter of the vegetables can affect cooking time. With beets increased diameter of beets will increase cooking time. Do not know how you are cooking broccoli. All head? Chopped up? Do not overfill the pot. I found a website helpful that suggest adjusted cooking times for some vegetables. I have had to add extra time and more liquid when cooking brown rice vs. White rice. Cannot use rice button for brown rice. It will not cook correctly.
