Yes, you need to change the "1 button push" setting to volume control in the app. It defaults to SIRI and answering a call, but I changed it with mine, and they can get very loud.

They do not, have to use your phone...

No they do not. These will need you to be next to your phone if you require constant changing but you have different options for the button controls.
