• Hi MrPoundCake, The coating is epoxy/polyester hybrid powder coat called Corvel 40-1042.

• It is a slick coating, probably to help food not stick or react to the aluminum. I don't use my dough hook very often, and haven't had issues with it yet. I use my flat paddle all the time. That paint stuff is very crunchy and chips off and can ruin your food. Within a couple years I had to replace my flat head with an uncoated one.
