You will be fine with 16 gauge wire - take a look at the cord on your girlfriend’s blow dryer, which is 1500-1850 watts continuous. I feel quality is more critical than gauge, so spend a few dollars more for whatever attribute floats your boat - oxygen free, pure copper, longitudinal stranding, special terminals, flux capacitor, etc.
