“If the battery isn't removable, what happens to this battery should it need replacing? Also I read that it stops charging once it hits 100% (I assume to avoid overcharging and damaging the battery) is this correct?”

A certified technician can replace the battery, if necessary. That is correct, the battery while plugged in will hold at 100%. Meaning the battery will only charge to maintain 100%.
