Yes, you can remove the M.2 PCIe SSD but make sure (obviously) you get another M.2 SSD. The capacity is completely up to you, if you don't plan on storing a lot of files, a 500GB would be ideal, if you plan on using this for gaming (which I wouldn't recommend) get a 1TB for storage, games and your OS. When having an SSD you want to make sure you always have at least 20% open and unused so it doesn't slow down the boot and everything else.
