Your device will still work, as will all the apps that don't require the latest OS update. For example, older phones often go unsupported after a number of years and a message will popup saying that the latest update is unsupported by your hardware. Eventually, developers will update their apps and will require a newer version of OS and will either stop working, or simply won't update (this often depends on the app developer). Honestly, it's in the developers best interest to allow apps to run on older OS's to broaden their customer base as many people use older tech. It is likely most of your apps will run for years after Google stops supporting this particular Chromebook.
