There is a global divide on the question of whether eggs should be stored in refrigerator or kept at room temperature and in the U.S. the tendency is to store them in the refrigerator to increase shelf life and to prevent the spread of salmonella. Studies done to compare eggs stored at room temperatures between 68°F and 77°F and those that were refrigerated at about 43°F revealed that both batches of eggs were equally bacteria-free for a span of two weeks. The refrigerator section can be set from 32°F (0°C) to 43°F (6°C). The United States Department of Agriculture (USDA) advises that a refrigerator set at 40 °F or below will protect most foods. It is also recommended that eggs should be kept in the carton in which you purchase them, as it is designed specifically for this purpose.
