“Do the demo units (macbook air M2) in the store have the same pre-loaded apps as a macbook out of the box? Or are there apps that are added to the demo - if so what are they? I remember seeing a lot of really neat looking apps on the store demo unit.”

It depends on which apps you were interested in. Demo units can occasionally display apps that can be purchased/downloaded from the Mac App Store. https://support.apple.com/guide/mac-help/built-in-apps-mchl110b00b7/mac This is a great article to see which apps come with any MacBook.
