“Can the bike be used when not plugged in? I realize the data screen won't function without electricity, but what about the peddles? I don't have an outlet near where I want to set it up.”

Sharon Great question! This unit can be used without being plugged in but no resistance will be available when pedaling. The resistance on this bike can only be changed when connected to a power source. You are welcome to plug the unit in using an extension cord to use all features of the unit.
