Great questions! The first dial is a timer that can be set up to 20 minutes, and will sound an alarm when the time has passed. The center dial is the heat setting. You turn this to your desired temperature and it will heat the oven until that temp is reached. The third dial is the balance control, which lets you divert more heat to the top or bottom, depending on how you want to cook any given pizza. Sorry, there was a problem. Please try again later.All of the temperature settings are predialed to the pizza style (NY, New Haven, Neaplitan). As you step down in temperature you can also dial the balance dial to adjust the top/bottom but it does work really well. For high temp, you can't really do much other than full top heat (you'll see why when you use it) but that is what you want. For neapolitan you'll never need a bottom burner on. No pans are not required for any style except deep dish.

That means you can adjust the top or bottom temperature for the perfect custom pizza. If you prefer deep dish, you can put a microwavable safe pan inside.
