Yes you can. On your Ring app go to devices select the deck camera then click off light. When done with your activity you can turn light back on.

Yes. You can turn the light off if you will be out there. You can also stop recording as well.

You can set the camera for home or away. If you set it for home you can then set it to not record while in that mode and light will not turn on and will not record you while you are on your deck. When you leave your deck you can switch the mode to away which you would have set to record videos and it would start recording any movement in the cameras range.
