“Hello, I recently updated to the most current firmware and now the headset will not pair to the dongle. is there a way to downgrade to the last firmware?”

Just re-pair the headset and the USB transmitter aka the dongle, do not close out the process while it is running. Also make sure the headset is plugged into the charging USB 3.2 and the transmitter(dongle) is also plugged in at the same time while it is pairing.
