1 Roku per TV set. You can get the ULTRA for the main TV and smaller(less expensive) rokus for the others.

ROKU makes a streaming stick that retails for roughly 50 bucks, and the Roku Express that retails for 25 to 30 bucks. The main advantages to the Ultra which retails for around 100 bucks, are that you can attach headphones to it (wich are included but any headset will work) and that it supports the new 4k TVs. All 3 Rokus will allow you to get to YouTubeTV as well as Netflix, Prime, HBO Go, Panfora and a host of other channels. It will even step you through logging into them when you do the installation.
