But if you use the delay start, does that mean the detergents sit on the clothes until it starts? Or is there a compartment that releases them when it starts to fill with water?”

The detergent isn't actually dispensed into the clothing until the wash cycle. The detergent will sit in the dispenser and water will come in and wash the detergent into the load at the appropriate time.

So, nothing touches the clothes until the water starts going into the washer. The water actually "pushes" the detergent into the washer, so it really gets mixed in well.
