The oven has a dehydrator not a hydrator. To hydrate is to add moisture. This oven will remove moisture from food like fruit slices.

The Dehydrate mode in the NX58H5600SS Range is designed to dry food or remove the moisture from food using heat circulation with available temperature settings ranging from 100˚F to 175˚F.
