I put Windows 11 on my Galaxy Boox Flex2 Alpha via the Windows "Insider Program" and it is running fine. It might not be appearing under regular System Update, but you can manually update it to Windows 11. Tom Guide has a good tutorial on the ways to do so: Google "force windows 11 update" for it.
