Some models have additional onboard memory, which allow more programs and files to be stored directly on the tablet itself. Other differences may be size differences, or which year the model was released.
Depending on the model you're comparing it to, there may be other differences, but without knowing which one to compare, it's difficult to determine the differences on all of the tablets.
