Hi Lois, It really can be disappointing when you are trying to control the heat of your cooktop and it doesn't respond the way you would like. Let us help you out. The heating elements retain heat better than a regular electric cooktop. The stored heat keeps it warmer for a longer period making the temperature change longer (making it hotter or cooler).
