I just copy my data to the external drive and then copy the files back to the target PC.

But if your backup is in the form of a complete copy of the OS drive there will be a lot of information that could hurt a different computer. Like OS system files and boot managers. Still possible to do so just make sure you move only the data you need/want on the new machine.
