“Do the photos and videos keep the image information from the iphone ie. Date, location. When I copy photos to a regular external drive the images lose all identifying info and chronological order making it difficult to find specific photos.”

Hi, please be informed that only the date of creation (the date the picture was clicked) of the photo is transferred with the photos that are transferred. The location and other metadata is not transferred as they are stored in a different file.
