Yes you should get 5.1 through the optical cable. I used optical on my last 5.1 system but since moving now use the Sonos soundbar with sub. There is a list of tv's from 2018 on ratings.com with reviews on which allow pass through HDMI ARC and 5.1, Sony is listed. I just purchased my Sony Z9D from BB and works with 5.1 on the optical. You should be okay.

Although with newer technology and awesome features this tv paired with a newer 4k receiver would be very easy to use. I got the UBP x700 which was on sale and a smaller and visually better blu ray than the 800 (better bang for the buck). and paired it with the newer STRDH790. I would return the 800 and get the 700 and use that money you saved towards the 790 receiver. You wont be dissapointed and then can have dolby vision and dolby atmos when watching blu ray.

Please try again later.Yes you will still get 5.1 surround but you won't be able to use the multi channel feature surround sound version because it requires the use through hdmi in order to receive multi channel audio which truly brings out the Audio performance of the Blu-ray player, you would have to purchase a receiver that has hdmi availability in it but for what your looking for budget wise you will still get 5.1 from your receiver from what you mentioned.
