Yes, I leave in entire time using mt 1500 degree shwank grill.

They stay in constantly. There are two of them for if your cooking two different pieces of meat. Each probe will beep when the meat reaches the temp you set. Each probe can be set to its own individual temp simultaniously. If only cooking on piece of meat, only use one probe.
