I was able to answer this question on my own. After choosing the option to turn off the clock when in standby, I quit the Options menu. The clock stops displaying after 5 minutes if nothing is pressed. Also, the opening of the door turns the display back on. So it appears that the definition of Standby is 5 minutes of no key presses and no door opening while the microwave is not cooking.
