A: You just empty and turn off as needed to defrost. Being out east you have higher humidity and during the summer will likely get frost. Packing a cooler tightly with frozen food while it thaws is easy. Frost free models actually raise the temp several times over 24 hours to thaw any frost, this contributes to freezer burn and quality issues. If you use this as back up storage you don't open as much causing frost, mines in the garage.
Q: Does this have to be transported upright or can it be laid flat?
A: The box can be laid any way for transportation. Just be sure to sit it upright for a few hours once you get it home before plugging it in.

A: Starting from the top of the freezer, the distance from the first shelf and second shelf is 7.3 inches, from second to fifth shelf, distance between the adjacent shelf is 9.8 inches.
