A: Yes it will still count steps. Haven't charge mine in over a week and I'm > 80%! I only use mine as a watch/activity tracker, so not notifcations/GPS etc for me. I love this watch!
Q: Can you change colors on the watch face and can you add apps from the Garmin web page?
A: The instinct display allows a black on white background or a white on black background but does not have additional color options. You cannot download apps or watch faces from Garmin Connect with this model
Q: Does the watch check your blood pressure?
A: No it does not seem to. Being in the health care field, I would not trust any automatic, or wrist based system to do blood pressure.

Q: How long does the battery last when in GPS mode? Will it last 50K or 100K race?
