You don't actually need "special" pans, they just have to be magnetic on the bottom. Copper bottom, like real Revere Ware, and all-aluminum cookware do not work! Some stainless pots and pans are magnetic -- some are not. Castiron pans will work, but that defeats the purpose: quick to heat and easy to change cooking temperatures. This is a different cooking experience that takes a little getting used to, but it's fast, fun and very efficient.
