“Will my kids be able to use this for school stuff such as prodigy, epic, extra math, etc? I see it’s no longer going to get software updates so I want to make sure we can download apps or access school sites for learning.”

I can't answer to specific software compatibility, but you can re-enable software updates. Google "Neverware" for information on how.

My Grandson used it during the Pandemic to complete his interactive School Classes and made outstanding grades that graduated Him to Junior High!

First make sure the apps they need to use for schoolwork are compatible with the Chrome operating system. These devices are designed to be used primarily on the Internet using apps from Google. This particular Chromebook does not support Google Play Store but does support apps from Chrome Web store, and no longer receives updates from Google, due to the age of the model.
