“Why do the with fans spool up every few minutes when at idle? Tried setting a manual fan curve, for a constant ~10% and it blows right through it. There's no increased load on the system, just the fans spooling up and down.”

Hello Korseau! In the Armoury Crate you can select a silent profile. This will prevent fans kicking on high. They will still turn on if there is demand on the system but won't be as loud as other profiles.
