No, you can only use Edge in 'S' mode (according to Microsoft). Mine stayed in S mode for only a few minutes before I switched to standard Windows 11, and I didn't try to install Chrome (or any other software) during that time. I have no reason to believe that the installs wouldn't have failed or been blocked.
