“I have a 2016 MacBook Pro 15in. The power brick that came with it says 87w but this hub only pushes 60w. Is 60w still sufficient to run the laptop or would I have to use my standard charger alongside the hub?”

Hi. The Belkin USB-C™ Express Dock 3.1 HD should be able to charge your MBP 2016 and most USB-C enabled laptops.
