Hi there! This unit does have a Proof mode. To select it, press Options, then select Proof, and then proceed to follow any other display prompts. While we don't have information on the range of temperatures that this oven can reach, ranges can reach very high temperatures when performing a self clean. If you would like to test to make sure that your oven temperature is operating correctly, there is a test you can perform at home.
