Hi Margaret- We're excited to hear of your interest! Per the Owner's Manual, always broil with the oven door closed. Monitor food closely while broiling. Use caution when broiling; placing food close to the broil element or burner increases smoking, spattering and the possibility of fats igniting. It is not necessary to preheat when using the Broil modes. The Broil High mode uses intense heat from the upper element or burner to sear foods. Broil Low mode uses less intense heat from the upper element or burner to cook food thoroughly while also browning the surface. Sorry, there was a problem. Please try again later.Delivered stove yesterday, not yet installed, will advise. However, the GE Cafe, Dual-Fuel, has an electric, oven and a gas cooktop. The lower oven is convection, the upper is a std oven. On most electric stoves, when using the broil feature, you get better results when the door is ajar.
