“Is it possible with this unit to watch a movie in surround sound while another viewer uses a headset to receive the audio, perhaps in stereo only? if not, which model is capable to do this, or how can it be done otherwise?”

Typically, every receiver I've ever owned will only output to speakers or headphones. You have to choose. However, because this supports Bluetooth 4.1 then it might be possible to output to speakers and then transmit the wireless Bluetooth signal. We would need someone to test this.
