When I first used this washer, I did the same thing--and when I unpaused it, it didn't just resume, but started to fill with more water. Pausing seems to cancel the automatic sensor for water level so it fills to maximum capacity. So--I listen to it, but don't pause it, don't open the lid-- and it works fine. I keep it on the "automatic" setting---most of my loads are small and this keeps the water level low. Also, I run it on "delicate" for many of my work clothes so they won't be agitated for a long time.. ( and, the cycle is faster). I have low water pressure too, so it takes awhile, but that was true for my old washer as well. Hope this helps.
