Hi Ann - Thanks for viewing GE Model JGS760EELES! The range does not have proof or dehydrate options. The lowest oven temperature setting is 170F. The WARM option heats up to approximately 180 degrees to keep cooked foods hot and ready to serve for up to 3 hours (The Warm function heats to 180 degrees to prevent food born bacteria growth). Our ranges meet all standards set by the Underwriters Laboratories (UL). UL evaluates external temperature limitations for ranges. The front and sides of a range can vary from 152 to 212 degrees F., depending on the materials. There are currently no temperature limitations for the horizontal surface, or cooktop, of a range. No dehydrate setting that I’ve noticed. There is a “warm” setting with no temp adjust/control option. So it might work for proofing.
