“My installer said you could change the display on the thermostat -E to display actual temperature in large numbers, and set temperature to the small number. He, nor I can't quite find where to do this.”

This can be accomplished using Farsight which is a feature available only on the Nest Learning Thermostat. https://nest.com/support/article/Tour-of-the-Nest-Learning-Thermostat-temperature-screen
