• I'd use a GoPro Hero5 and set it to 2.7K 60fps wide. You should get about 2hrs of video on a 64GB card. However you will be limited by the battery which lasts about an hour. You could connect it to an external battery source to bypass this issue and you could use a 128GB card to double the video length. The Hero5 can respond to voice control too which makes it hands free but not sure how the airplane sound will affect its use. There is also a wearable remote button that can be used to turn the camera on and off and give voice instructions it the camera is some distance from you.
