Hi there, We're sorry to hear about your cooking troubles. We are finding that this griddle is made out of cast iron and therefore will absorb a large amount of heat and take longer to cool down than normal stainless steel cookware. The cast iron material is why you are finding it to have a rough texture to it. We found the following information regarding seasoning your cast iron before cooking with it: 1. Before using the first time, wash with hot water only (no soap) to make sure it is clean. 2. Dry thoroughly. 3. Then, season it with a light coating of vegetable oil. 4. After cooking, let the griddle cool and pour off excess grease. 5. Wash the griddle in hot water with a sponge or stiff brush. Do not use scrubbing pads or steel wool. 6. Towel dry and apply a light coat of cooking spray or vegetable oil. Store in cool, dry place. If you did not season your cast iron before you cooked on it then this could be why you are experiencing troubles. We hope that the above information helps. I seasoned it just as the extraction said, and it did not work very well at all. I’ve had other cast iron cookware that had smooth surfaces. This one does not have a smooth service, and I don’t see it working very well. I would like to know if G And is going anything to correct this.
